Yummy Vegan Burger (+ Sweet Potato Wedges)

Hey everyone,

So today I thought I'd do a foodie post. My house mate Emma and I decided we wanted to cook a few more things from scratch and decided on making a Vegan Burger from Jamie Oliver's website for the two of us and Jord. A little family house meal. Anyway, I thought I would take some pictures and run through what we did!

This is what you will need for the burgers (3 - 4 burgers):

1 x 400 g tin of chickpeas
1 x 340 g tin of sweetcorn
½ a bunch of fresh coriander
½ teaspoon paprika
½ teaspoon ground coriander
½ teaspoon whole cumin (ground cumin is what Jamie's recommended but Waitrose didn't have it in stock) 
zest of 1 lemon
3 heaped tablespoons plain flour, plus extra for dusting
table salt (Jamie's recipe said sea salt, but alas we only had table)
olive oil (Jamie's recipe called for rapeseed oil but we had olive oil in)
sliced tomatoes
wholemeal bread buns

For the wedges:

4 -5 small/medium potatoes
olive oil
cajun spice
(I haven't put exact measurements as I think it varies for personal taste)

So, first we drained the sweetcorn and chick peas.

Then we popped them in a blender (or in our case, the nutri-bullet, then another smoothie maker then back to the nutri-bullet) and added the other spices, flour, lemon and coriander. It wants to be a thick and kinda chunky consistency.

Then for the messy bit, we scooped it all out and tried to make the shape of three burgers on a flour dusted plate. You could make 4 burgers from this recipe but we made 3 - little piglets. Then you want to pop them in the fridge for 30 mins so they can form.

While they where making, we made the wedges. They are so simple to make. Just peel and chop the potatoes, chuck them in a bowl and the oil and spices and rub them together for making sure everything is evenly spread. Then pop them on a baking tray and in the over for about 20 - 25 mins at about 200 degrees. I have just bought a chip cutter from ebay which should be arriving soon which I'm looking forward to using. I shall let you know how I get on when it arrives!

We then took the burgers out and popped them into a pan with a bit of the oil and cooked them on both sides for about 7 minutes.

Then while we waited, we prepped the plates!

We made a little salad on the side and obviously at this point, add whatever you like, maybe onion, pepper, cheese or some sauce (i added a little light mayo).

and voila, you are done.

This was scrummy tea and it felt so good to actually make something. I am so guilty of buying easy things into make or ordering a take away but it was so satisfying creating a meal and knowing exactly what was going in it.
